For authentic Argentine asado, we recommend hardwood charcoal (white quebracho from Argentina is ideal) or natural lump charcoal. Avoid lighter fluid — use a chimney starter for clean ignition. Wood chunks can be added for additional flavor.
How long does the oven take to reach pizza temperature?
A traditional Argentine wood-fired oven reaches optimal pizza temperatures (700–800°F) in approximately 45–60 minutes. The thermal mass retains heat for hours after the fire is out, perfect for baking bread and roasts after pizza.
